To promote chlorophyll production, tea plants are shaded for 20-30 days before harvesting, which gives the tea a vibrant green color and increases the amino acid content, primarily L-theanine, which contributes to matcha’s unique umami flavor and benefits.

After being hand-picked, the young leaves are immediately steamed to prevent oxidation, thus preserving their fresh, vibrant color and nutritional integrity.Workers dry the steamed leaves, remove the stems and veins, and finally make them into Tencha.
Finally, tencha is traditionally ground into a fine, smooth powder using a stone mill. This grinding method minimizes heat generation, thereby preserving the subtle aroma of Hojicha to the greatest extent possible.
