Quercetin
Introduction
Commercial production of quercetin often uses Sophora japonica flower buds as the primary botanical source due to their high quercetin glycoside content (mainly rutin). The industrial process typically involves water–ethanol extraction, followed by hydrolysis to convert rutin into quercetin aglycone, and purification to achieve high assay levels.
Physically, quercetin appears as a yellow crystalline powder, sparingly soluble in water but soluble in ethanol and alkaline solutions. It is stable under normal dry storage conditions but sensitive to strong light and high humidity. With its plant-derived origin, potent antioxidant profile, and wide range of potential health-supportive roles, quercetin is a popular ingredient in nutraceuticals, functional foods, and cosmetic formulations worldwide.
Quercetin is a naturally occurring flavonoid (CAS No. 117-39-5, molecular formula C₁₅H₁₀O₇) widely distributed in fruits, vegetables, and medicinal plants. It is particularly abundant in Sophora japonica (Japanese pagoda tree) flower buds, onion skins, and capers. As a polyphenolic compound, quercetin exhibits strong antioxidant properties and contributes to the plant’s defense system against environmental stress.
