Introduction

Its primary active ingredient, lentinan, is a beta-D-glucan polysaccharide recognized for its immune-modulating effects. Shiitake also contains eritadenine, which supports cardiovascular health, as well as phenolic compounds and essential amino acids that contribute to its antioxidant profile.

Commercial extraction uses high-quality cultivated shiitake fruiting bodies that are dried and milled, followed by hot-water extraction to release water-soluble polysaccharides, including lentinan. The concentrated extract is spray-dried into a fine light to dark brown powder, with standardized products available to polysaccharides ≥30%–50%, beta-D-glucans ≥15%, or lentinan ≥10%.
